This weekend was incredibly refreshing yet productive, preparing me for today's blizzard. It snowed like crazy on Saturday so we stayed in and watched movies with tea and warm blankets for a good part of the day.

This weekend was incredibly refreshing yet productive, preparing me for today's blizzard. It snowed like crazy on Saturday so we stayed in and watched movies with tea and warm blankets for a good part of the day.
I love chili and make it way too often in the winter months. This has been my go-to recipe for the last decade or so after tweaking and refining it for years. Chives and a touch of cocoa powder really make this one shine!
Ingredients:
- 1 lb ground beef (or turkey)
- 2 medium-sized yellow onions, chopped
- 3 cloves garlic, diced
- 1 14 oz can crushed tomatoes
- 1 28 oz can diced tomatoes
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 cup frozen corn
- 1/2 jalepeno, chopped
- 2 cans black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 2 Tbs cumin
- 1 Tbs chili powder
- 1/4 cup chives, chopped, plus more for garnish
- 1/4 tsn unsweetened cocoa powder
- Salt and pepper to taste
Toppings:
- Shredded cheddar cheese
- 1 avocado, salted and sliced
- Cilantro, chopped
Directions:
- Heat olive oil in a large skillet and sauté the onions for about 5 minutes
- Add the ground turkey, garlic, salt and pepper to taste, and cook until lightly browned
- Move turkey and onions into the slow cooker
- Add all of the other ingredients and give it a good stir
- Cook on high for 4 hours
- Serve in bowls and sprinkle with cheddar cheese, sliced avocados, and cilantro
- Enjoy!
Moving to the suburbs has had many pros and cons. One of many welcome changes was getting more closet space. Somehow I got my husband to agree to letting me have the walk-in closet to myself (Another post on the power of persuasion might be in order!).
I have a lot of clothing, shoes, and accessories, so it's important to stay organized.
