Chocolate Chip Peanut Butter Blondies

We are having a bake sale today at work to raise money for Elisa and Nathan: An adorable couple from Brooklyn who were each recently diagnosed with stage 3 and 4 cancer within days of each other. For the bake sale, I knew that no one would buy anything too unhealthy but I didn’t want to go crazy on the butter and sugar so I made blondies that have a little bit of healthy in them and a whole lot of rich, sweet, chocolatey heaven. My boyfriend said that this was my most successful baking feat yet…And I have a feeling I’ll sell out quickly today!

Ingredients
1/3 cup organic cane sugar
1/3 cup brown sugar
1/2 cup organic butter or ghee (clarified butter)
1 egg
1/3 cup natural peanut butter peanut butter (I used crunchy which added texture)
1/2 teaspoon pure vanilla extract
3/4 cup whole-wheat flour
1 cup rolled oats
1/2 teaspoon aluminum-free baking soda
1/4 teaspoon fine sea salt
1 package semisweet chocolate chips (I use a brand that is sweetened with fruit juice to avoid extra refined sugar)

Directions:
– Preheat oven to 350
-In a large bowl, mix butter with sugar and brown sugar until smooth
-Beat in the egg, peanut butter, vanilla, and blend
-In a separate bowl, mix flour, baking soda, salt, and oats
-Slowly add to wet ingredients while continuously mixing
-Stir in chocolate chips
-Spread dough evenly in a buttered 8-inch square baking pan
-Bake for 25 to 30 minutes (or until golden brown at the edges)
-Cool for 10 minutes, then cut into pieces
