Last week, Victoria and I got together for a little mid-week ladies lunch at her apartment. I’m so lucky to have talented friends and she is one of them! Not only is she an incredible blogger and graphic designer, but she went to culinary school and can create incredible and intricate recipes like nobody’s biznas.
When she invited me over, I couldn’t wait to see what she would whip up. Not only was everything fresh, colorful, and delicious, but we felt healthy and vibrant after eating because we stuck to good ole’ fashion clean food. We paired our meal with homemade mint iced tea, wonderful conversation, and some relaxation on her luxuriously comfortable couch. I hope that our little luncheon inspires one of your own! For my portion of the lunch I brought hummus mixed with my famous homemade vegan basil pesto and crudités. Kind of boring but I got nervous to cook for someone with this much culinary skill! She baked some pita bread to make chips for dipping.
For a salad, she whipped up a super colorful and tasty mixture of avocados, radicchio, peppers, tomatoes, and a vinaigrette. You can find the full recipe here.
She also made a fruit salad (recipe here) that we ate with our meal instead of dessert. It felt meal-like because of her balsamic glaze. I love the touch of fresh mint from her garden!
For dessert (not pictured) I made my almond butter cookies which were the perfect sweet treat to close out our healthy meal.
