Every year, my cousin makes a huge variety of Christmas cookies. For the last 3 years, I’ve tried to make one of her recipes. This year I went for the famous snowball cookies. They are pretty dense so you can only eat one or two at a time but they taste just like sugary buttery Christmas to me!
Makes about 16 cookies.
Ingredients:
-1 cup unsalted butter
-1/2 cup confectioners’ sugar
-1/4 tspn salt
-1 tspn vanilla extract
-2 1/4 cups all-purpose flour
-1 cup chopped pecans
-1/3 cup confectioners sugar
Directions:
-Preheat oven to 350 degrees
-Chop pecans by pulsing in a food processor or rolling in a plastic bag with a rolling pin
-Cream the butter with 1/2 cup of the confectioners’ sugar and vanilla
-Mix in the flour, nuts and salt
-Roll about 1 tblspn of dough into balls and place on parchment paper on a cookie sheet
-Bake for 15 minutes
-Make sure the cookies don’t get get brown
-While cookies are still hot roll them in confectioners’ sugar
-Enjoy!
These are my favorite cookie this time of year! I made a batch of them last weekend and may or may not have consumed 80% by myself.
