I had some leftover Nutella from my last batch of Nutella Sea Salt Cookies that I couldn’t let go to waste. Instead of making more of the same, my boyfriend suggested making “sandwiches”- cookies as the bread and Nutella as the filling. This brainchild of his sugar-addicted mind was pure genius. I think the picture speaks for itself.
Ingredients:
-1/2 cup unsalted butter, softened
-3/4 cup creamy all natural peanut butter
-1/2 cup organic cane sugar
-1/2 cup brown sugar
-2 eggs
-1 tspn pure vanilla extract
-2 cups whole wheat/unbleached white flour
-1/2 tspn baking powder
-1/2 tpsn baking soda
-1 tspn salt
-2 cups semisweet chocolate chips
Directions:
-Preheat oven to 350F
-Mix butter, peanut butter, and sugars in a large bowl with a whisk or electric mixer until smooth
-Add eggs and vanilla extract and continue to mix until smooth
-In a separate bowl, mix flour, baking soda, baking powder, salt
-Slowly add dry ingredients to wet ingredients, constantly stirring
-Add chocolate chips and mix
-Lightly grease a baking sheet
-Drop spoonfuls of cookie batter on baking sheet
-Bake for 10-12 minutes
-Let cool
-Spread Nutella on the bottom side of one cookie and add a second for a little piece of heaven
-Enjoy!
