Coconut Crusted Chicken

For many of us, grilled chicken is a go-to staple in our diets. But let's get real, that can be terribly boring, week after week. This coconut crusted chicken recipe is just the cure. It has a faint coconut flavor but is also salty and satisfying without any of the breadcrumbs (gluten) or vegetable oils.

I served it with this homemade BBQ sauce, ketchup, and spicy mustard for a fun little meal.

Spring Sandals Wish List

I'm admittedly not a shoe girl. Surprising, I know, to hear this coming from a fashion blogger, but I'd rather buy jewelry and bags any day. I rotate a few pairs of trusty old favorites when it comes to the world below my ankles. This spring, however, some of the styles popping up have me craving a spring sandals shopping spree!

Mashed Cauliflower

This mashed cauliflower recipe was inspired by a dish at Hu Kitchen, my current favorite healthy restaurant in New York for so many reasons (it also inspired these gluten free blondies). My husband and I both love mashed potatoes but try to stay away from so much starch on a regular basis (Thanksgiving not included of course!).
