Buffalo Chicken Chili

With everything going on this summer, I stopped creating recipes and testing them completely. I missed it, but was just too tired and overwhelmed, and stuck to tried and true classics when I did cook. Now that I'm finally feeling better, it feels so good to get creative in the kitchen again!

I wanted to use some jalapeño peppers from the garden before they went bad and was craving a hearty soup, so the other night I decided to try my hand at a buffalo chicken chili and woah.

Oh hi... It's been a minute! Two months, to be exact. This is the longest I've ever gone without writing on Lemon Stripes since 2010. It felt very wrong but also very necessary.

Earlier in the summer, at the beginning of my book tour, I was diagnosed with Epstein Barr Virus and it totally knocked me off my feet for a while there.

Caesar Pasta Salad

This Instagram-viral dish had me intrigued from the minute I saw it, so I had to try it out with my current go-to Caesar dressing. I've now made it for two BBQs with friends and it always gets gobbled right up. 

Caesar Pasta Salad

Makes 4-6 servings

Salad Ingredients:

  • 2 heads romaine lettuce, roughly chopped
  • 2 cups cooked pasta of your choice, salted
  • 1 1/2 cups torn chunks of stale-ish bread (sourdough is the best!)
  • 1 Tbs butter or olive oil
  • 1/4 cup shaved parmesan cheese

Dressing Ingredients:

  • 1/3 cup good olive oil
  • Juice from 1/2 lemon
  • 2 garlic cloves, minced or pressed
  • 2 Tbs plain Greek yogurt (I use non-dairy)
  • 1 Tbs Dijon mustard
  • 1 Tbs parmesan cheese
  • 2 Tbs apple cider vinegar
  • 1 anchovy filet with oils (optional)
  • Salt and black pepper to taste

Directions:

  1. In a large bowl, mix the chopped romaine and pasta, and set aside.
