Banana Coconut Cream Smoothie

I had some leftover coconut creamer leftover from last week’s vegan chocolate cake, so I decided to experiment with it in a smoothie this morning. It’s finally warm and sunny in New York City and sipping this piña colada-like concoction took me to a place with palm trees, white beaches, and salt water!

Ingredients:
-1 frozen banana
-1 small handful frozen pineapple
-1 cup coconut water
-2 tablespoons unsweetened coconut flakes
-2 tablespoons coconut creamer (like coffee creamer but made out of coconut milk)
-1 tspn flax seeds if you want some extra Omega-3s and fiber!

Directions:
Blend and enjoy!

  1. I’ve just decided that I need to incorporate more bananas (for the potassium) into my diet; I just hate the texture! This looks like a great (and healthy) option!
