Sweet and Salty Cashew Cookies

I put out a large Tupperware container of these cookies at work and they were gone in under 15 minutes. They are potentially my favorite cookies of all time. Salty, sweet, crunchy, so satisfying. Enough said.

Derived from original recipe in King Arthur Flour’s cookbook- Whole Grain Baking

Ingredients:
-1/2 cup unsalted butter
-3/4 cup organic cane sugar
-2 cups rolled oats, blended in Vitamix for a few seconds
-1 egg
-1 tspn real vanilla extract
-1/2 tspn sea salt salt
-1/4 tspn baking powder
-2 cups salted cashews, finely chopped (I blended those for a few seconds as well)
– extra fine sea salt for topping

Directions:
-Preheat oven to 350
-Mix butter, sugar, salt, baking powder, vanilla, and egg until smooth
-Add oats and mix
-Add cashews and mix
-Drop dough by teaspoons onto lightly buttered baking sheets
-Sprinkle each cookie with salt
-Bake 12-14 minutes, or until light golden brown
-Remove from the oven and cool for 5 minutes before moving.

Makes about 2 dozen cookies
