Feeding 13 people is no easy feat. During our family reunion this week, my aunt Marilyn whipped up this classic recipe with a flavorful twist for lunch one day. My family devoured them almost before I could even take photos. It was a mad dash for the eggs! They make for a great easy lunch, appetizer, or brunch side.
Ingredients:
– A dozen eggs, hard boiled
– 2 tblspns mayonnaise
– 2 tblspons dijon mustard
– Salt, pepper, and curry powder to taste
– Paprika for sprinkling
Directions:
– Peel the eggs
– Cut in half, and remove the yolk
– Place yolks in a separate bowl
– Mash the yolks with a fork, until they form a paste
– Mix in salt, pepper, mayo, mustard, and curry powder
– Mash up until well mixed
– Using two spoons, place yolk mixture back into the egg halves
– Sprinkle paprika over the finalized eggs
– Enjoy!
