Healthy Breakfast Sandwich

When I worked at Integrative Nutrition, I was surrounded by healthy people day in and day out. I always observed what people made for their breakfast. They got pretty creative in our office kitchen! This recipe is derived from my mornings there. It’s now my go-to when I want something heartier than my usual green smoothie. I love a good breakfast sandwich and this is a healthier version of a bacon, egg, and cheese.

It is the ultimate healthy breakfast sandwich because:

Avocados and olive oil give you tons of Omega-3s. You need those healthy fats!
Eggs give you a whole protein and fill you up until lunch
Sesame seeds are high in protein, fiber, magnesium, iron, and folic acid. Plus they add a delicious crunch.
Ezekiel bread provides you with whole grains that are sprouted which helps you digest the gluten in the wheat. Many people have a problem eating gluten but not in the form of sprouted grains. Try it out!

Ingredients:
-1 egg (hard boiled)
-1/2 Ezekiel sprouted grain English muffin
-1/2 avocado, sliced
-Drizzle of extra virgin olive oil
-Pinch of white sesame seeds
-Sea salt and black pepper to taste

Directions:
-Toast your Ezekial muffin to perfection
-Drizzle the toasted bread with good olive oil
-Place cut avocado on top of toast
-Slice the egg and place on top of avocado
-Drizzle again with olive oil
-Top with sesame seeds
-Finish with salt and pepper to taste
-Enjoy!

    Any other ideas instead of olive oil. I should try it first before I question it.:)
