Paleo Peanut Butter Cookies

I haven’t baked since I moved to the suburbs 6 months ago. I would have thought that moving out here would make me bake more, but apparently not! Last weekend, we were craving something sweet but are trying to stick to a Paleo diet as much as possible so I searched online for the perfect paleo cookie recipe.

I’m a nut-butter freak so when I found these incredibly easy-to-make peanut butter chocolate chip cookies by the Detoxinista that are Paleo-friendly, I decided to give them a whirl.

The outcome was magical. I did not expect them to actually taste like peanut butter cookies given the simple ingredient list but they did!

Note: I’ve since learned that peanuts aren’t technically Paleo (depends who you ask!). Just swap in almond or cashew butter for peanuts if you want to make them truly Paleo.

Paleo Cookies

Ingredients:
– 1 cup creamy peanut butter
– 1/3 cup honey
– 1 egg
– 1/2 teaspoon baking soda
– 1/2 teaspoon sea salt
– 1/2 cup chocolate chips (I used a broken up chocolate bar because that’s all I had!)

5 ingredient paleo cookies

This recipe takes 3 steps. It could not be easier! Preheat your oven to 350. Mix the first 5 ingredients together in a bowl until smooth. Fold in chocolate chips. Spoon cookies onto a baking sheet lined with parchment paper using a tablespoon. Bake for 8-10 minutes. Let the cookies set for about 10 minutes before eating them. Enjoy!

We may have eaten the entire batch in one day which kind of goes against the whole point of trying to be healthy but they’re just so darn good!

    These look great! Unfortunately, peanuts and peanut butter are not Paleo. Might work with almond butter?

    I just tried these and they are wayyy too salty ! I think you ought to specify that the peanut butter should be unsalted because with the 1/2 teasp of salt and normal creamy peanut butter they dont work. Il try them without the salt tonight im sure they ll be great!
