Holiday Roasted Nuts

My dad’s wife, Jennifer, is an amazing cook. But one of my favorite things she makes is so simple and so delicious, it will truly be the star of any party. Her roasted holiday nut mix is salty, slightly sweet, crunchy, and infused with shallots that really take it up a notch. I promise you, everyone will love this and it’s pretty simple to make. Here is her recipe:

Roasted Holiday Nuts

Ingredients:
– 5 cups mixed nuts
– 1 cup dried cranberries
– 1 Tbs olive oil
– 2 small shallots, thinly sliced
– 3 garlic cloves, thinly sliced lengthwise
– 2 Tbs unsalted butter
– 1/4 cup coarsely chopped rosemary
– 1 Tbs firmly packed dark brown sugar
– 1 tsp sea salt
– 1/4 tsp cayenne pepper, optional

Directions:
1. Preheat oven to 350.
2. Place nuts in a single layer on 2 rimmed baking sheets. Toast until nuts are golden and fragrant (about 8-12 mins), rotating halfway through cooking. Transfer nuts to a large bowl and set aside.
3. Heat olive oil in a small skillet over medium heat. Add shallots and garlic and cook until golden, 3-5 minutes, stirring constantly. Transfer to a paper towel-lined plate and set aside.
4. Melt butter and pour it over the roasted nuts.
5. Add rosemary, brown sugar, salt, and cayenne if using. Stir well to combine.
6. Toss in the cranberries, garlic and shallots. Mix to combine.
7. Serve warm.
8. Reheat for 10 minutes at 300 if needed.
9. Enjoy!
