Viral Jennifer Aniston Salad

I’ve seen this viral salad all over the socials and decided to make it for myself and it is delicious, filling, bright, and the perfect make-ahead lunch. I add shredded chicken and avocado (not pictured) to mine for some more protein and healthy fat. I also added more flavor to the dressing as the original recipe is only lemon juice and olive oil.

Jennifer Aniston Salad

Makes 2-4 servings

Dressing Ingredients:

  • 1/4 cup olive oil
  • Juice from one lemon
  • 1 tsp Djion mustard
  • 1 Tbs maple syrup
  • Salt and pepper to taste

Salad Ingredients:

  • 2 cups, cooked quinoa
  • 1 15-oz can, garbanzo beans
  • 1 cup chopped cucumber
  • 1/2 red onion, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh mint leaves, chopped
  • 1 cup salted pistachios, chopped
  • 1 cup crumbled feta cheese
  • 2 cups shredded chicken
  • 1 avocado, chopped

Directions:

  1. Mix the dressing ingredients in a small bowl and set aside.
  2. In a large bowl, mix all of the salad ingredients except for avocado.
  3. Pour dressing over the salad and mix well.
  4. Add avocado and toss again.
  5. Enjoy!
