
I’ve seen this viral salad all over the socials and decided to make it for myself and it is delicious, filling, bright, and the perfect make-ahead lunch. I add shredded chicken and avocado (not pictured) to mine for some more protein and healthy fat. I also added more flavor to the dressing as the original recipe is only lemon juice and olive oil.

Jennifer Aniston Salad
Makes 2-4 servings
Dressing Ingredients:
- 1/4 cup olive oil
- Juice from one lemon
- 1 tsp Djion mustard
- 1 Tbs maple syrup
- Salt and pepper to taste
Salad Ingredients:
- 2 cups, cooked quinoa
- 1 15-oz can, garbanzo beans
- 1 cup chopped cucumber
- 1/2 red onion, chopped
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh mint leaves, chopped
- 1 cup salted pistachios, chopped
- 1 cup crumbled feta cheese
- 2 cups shredded chicken
- 1 avocado, chopped
Directions:
- Mix the dressing ingredients in a small bowl and set aside.
- In a large bowl, mix all of the salad ingredients except for avocado.
- Pour dressing over the salad and mix well.
- Add avocado and toss again.
- Enjoy!
