It was so fun to see you guys making last week's recipes and following along with the meal plan. And it was nice to feel like people were holding me accountable for sticking with it I think this week's line up might be even better!

Monday Night- Rice Bowls with Peanut Sauce:  Another one of my vegetarian favorites, these rice bowls with peanut sauce couldn't be easier to throw together and everyone in my family loves them.

Weeknight Pasta Bake

This easy weeknight pasta-bake is one of our go-to dinners because it requires minimal prep work and everyone in the family loves it. It sneakily packs in lots of leafy greens as an added bonus. I make it with chickpea pasta for extra protein and feel good about that too.

If you're dairy-free, make it without the mozzarella topping.

Baked Raspberry Donuts

Amalia has been very into baking lately and often comes home from school asking if we can bake something new. I also love to bake and love that we can share this together. We make a lot of better-for-you baked goods with ingredients like collagen, chia seeds, fresh fruit, and high-fiber flour that she'll not only eat but fully enjoy.

My Daily Hand Care Routine

I have this thing for night routines. I've been going through this hand routine every night before bed lately along with my foot care routine. Life is quite sexy these days, I tell ya. Pre-COVID, I would get a manicure every week and this replaces that. It is a silly thing to do but this routine keeps my hands feeling really soft and my nails and cuticles healthy.
