Weeknight Pasta Bake

This easy weeknight pasta-bake is one of our go-to dinners because it requires minimal prep work and everyone in the family loves it. It sneakily packs in lots of leafy greens as an added bonus. I make it with chickpea pasta for extra protein and feel good about that too.

If you're dairy-free, make it without the mozzarella topping.

Amalia has been very into baking lately and often comes home from school asking if we can bake something new. I also love to bake and love that we can share this together. We make a lot of better-for-you baked goods with ingredients like collagen, chia seeds, fresh fruit, and high-fiber flour that she'll not only eat but fully enjoy.

My Daily Hand Care Routine

I have this thing for night routines. I've been going through this hand routine every night before bed lately along with my foot care routine. Life is quite sexy these days, I tell ya. Pre-COVID, I would get a manicure every week and this replaces that. It is a silly thing to do but this routine keeps my hands feeling really soft and my nails and cuticles healthy.

Second Trimester Recap

Excluding the last few weeks, my second trimester has been pretty great physically which was a shock and surprise because I didn't feel that in my first pregnancy. I felt really good for most of it! I had energy, I could eat pretty much any food without getting sick, my morning sickness completely left the building, I was able to move my body every day, and I didn't have too many aches and pains until very recently.
