Karolina’s Vegan Chocolate Cake

Recipe from my dear friend and healthy chef, Karolina.

This recipe makes one 9" cake or a dozen cupcakes. If you want to do two layers of cake, double it up!

Cake Ingredients:
-1 cup almond milk (or whatever you want to use)
-1 tspn apple cider vinegar
-3/4 cup organic cane sugar
-1/3 cup coconut oil
-1 tspn vanilla extract
-1/2 tspn almond extract
-1 cup whole wheat pastry flour
-1/3 cup cocoa
-3/4 tspn baking soda
-1/2 tspn baking powder
-1/4 tspn salt

Cake Directions:
-Preheat oven 350
-Whisk together milk and vinegar in a bowl and leave for a few minutes to "curdle"
-Add sugar, oil, vanilla, almond to milk and vin and beat until a little foamy
-Sift together all dry ingredients
-Combine wet and dry and mix together until no lumps
-Bake for 20 minutes or until done
-When it cools, ice it with vegan buttercream frosting below

Icing Ingredients:
-1/2 cup coconut oil
-1/2 cup earth balance
-3 cups confectioners sugar (if you want to use an alt.

Neon and Nude

What is it about wearing neon colors that gets me so excited? Bright colors always put a skip in my step, and I'm so excited to be pairing them with khaki and nude shades instead of winter blacks! I definitely need that orange dress with the nude strappy sandals ASAP! Now only if the sun would shine here in New York City...

Creamy Dairy-Free Baked Pasta

I gave up dairy over two years ago but I still crave two things: pizza and mac and cheese. Pizza is easy to remedy with pizza dough, vegan pesto, tomato sauce, mushrooms, and chicken sausage. Mac and cheese is a little harder to come by. I'm not a huge fan of Daiya and other vegan cheeses, so when I came across this recipe on one of my favorite sites, Gluten Free Goddess, I got super excited!

Chocolate Matzo Brittle

Even though I'm not Jewish (well, 1/4 technically), I have always loved Matzo. I found this incredible recipe for Matzo brittle a couple days ago, and had to try it out. It's sweet, nutty, chocolaty, and unleavened. Happy Passover!

(This makes a lot so I would cut the recipe in half if you're making for only 1 or 2 people)

Ingredients:
-10 ounces semisweet chocolate chips
-12-ounce box whole wheat matzo
-8 ounces butter (original recipe used Passover margarine)
-3/4 teaspoon salt
-1 cup light brown sugar
-1 teaspoon cinnamon
-1 teaspoon vanilla extract
-1 cup chopped pecans

Directions:
-Preheat oven to 375 degrees.
