Last week, my coworker had been stress-eating Ben & Jerry’s ice cream and came to me for a solution. I played around and came up with this recipe that tastes (almost) like ice cream and has no added sweeteners. It’s actually so good that I’ve made it 3 times since for a sweet treat with no guilt!
Ingredients:
– 1 frozen banana, chopped,
-1.5 tablespoons natural creamy peanut butter/almond butter
-1/4 cup almond/coconut/cashew milk
-1/4 tspn vanilla extract
-1 tblspn dark chocolate chips (optional)
Directions:
-Put bananas, peanut butter, and almond milk in the blender
-Blend on low, stopping to stir with a wooden spoon every once in a while
-Remove and top with chocolate chips, berries, granola, nuts, caramel, or whatever else you enjoy
-To make it “chocolate ice cream” add chocolate chips or cacao nibs while blending. Same goes for strawberry!
Julia, this looks so delicious and delightful!!! I’ve never heard of fruit juice-sweetened dark chocolate chips… but I am definitely going to research them! 🙂
