Braised Tomatoes with Burrata

If you’re looking for an addictive, flavorful appetizer to serve to family and friends (or just yourself), look no further. This recipe will make your kitchen smell like Italy and tickle your tastebuds with bursts of brightness from the tomatoes, creaminess from the burrata, and a punch of garlic. I guarantee you’ll come back for more… and more and more. It’s one of my favorite summer dishes and a fun addition to any dinner party.

Braised Tomatoes with Burrata

Makes 4-6 servings

Ingredients:

  • ¾ cup olive oil
  • 4 cups baby or grape tomatoes (30 to 40)
  • ½ teaspoon sea salt, plus more for serving
  • ½ teaspoon black pepper, plus more for serving
  • 6 garlic cloves, minced or pressed
  • 6 basil leaves, roughly chopped, plus more for serving
  • 8 ounces burrata 
  • Balsamic glaze for drizzling, optional
  • Crusty bread, toasted

Directions:

  1. Add the olive oil to a large pan over medium heat. 
  2. Add the tomatoes, salt, pepper, garlic, and basil, and stir to combine.
  3. Cover the pan and cook until the tomatoes are blistered, about 20 minutes, stirring halfway through.
  4. Preheat the oven to broil on medium-high heat.
  5. Remove the lid and place the pan in the broiler until the tomatoes begin to char, 5 to 7 minutes.
  6. Place the burrata in a large serving dish and sprinkle on a pinch of salt and pepper. 
  7. Spoon the hot tomato mixture over the cheese. Drizzle with balsamic glaze if using, and top with more chopped basil. 
  8. Serve with toasted bread.
