Vegetarian Recipe Round Up

I’ve been in a recipe rut for the last few weeks and I can’t seem to get out of it! Anel and I have been eating 80% vegetarian since our eat-less-meat challenge and I find that coming up with new vegetarian recipes is especially challenging to me. I make the same things over and over… but we’re sick of them. Which is why I’m posting a vegetarian recipe round-up today!

I spent an hour last night Googling and Pinterest-ing vegetarian recipes. I wasn’t planning to post today but I couldn’t not share some of these delicious looking dishes I found.

Vegan Niçoise Salad (Love & Lemons): I loveeeeeee a good Niçoise salad. Ask anyone who knows me, if it’s on a menu, I order it. I love the idea of a totally vegetarian version. I can’t wait to try this.

Vegetarian Recipes for Summer

Curried Chickpea Salad Sandwiches with Avocado (Inspiralized): Ali posts this to her Instagram stories quite often and I always make a note to try it then forget.

Vegan Broccoli “Cheddar” Soup (Clean Food, Dirty City): Uhhh yum. My mouth is officially watering just reading this recipe.

Vegan Carrot Lox (Love & Lemons): Super curious about this one. I feel like it could either be really good or really gross. If I try it, I’ll report back. It would be a fun thing to make with carrots from our garden!

Vegetarian lunch recipes

Summer Vegetable Curry (101 Cookbooks): 101 Cookbooks was the first blog I ever followed so it holds a special place in my heart. Heidi’s recipes are beautiful, healthy, and tasty. I love a good curry and this one looks amazing.

Crunchy Thai Quinoa Salad (Ambitious Kitchen): Basically my dream salad.

Beer-Battered Cauliflower Nuggets (Half-Baked Harvest): We’ve been making buffalo cauliflower in the air fryer but this is next-level. It would be fun to serve as an app whenever dinner parties are a thing again.

Quick Chana Masala (Cookie & Kate): I’ve never been able to successfully make Indian food but this chana masala looks easy enough!

Black Bean & Avocado Quesadillas (Naturally Ella): I’m thinking this could be good for the whole family. Amalia loves quesadillas and I’m always trying to figure out ways to sneak more nutrients into them for her.

Lemon Butter Pasta with Spicy Breadcrumbs (Half-Baked Harvest): I’m sure mine won’t look this good but wow. 100% need to try this like right now.

    Awesome, will def be trying some of these. Some of our vegetarian favorites are:
    1. Eggplant Caprese Stacks. A much lighter and fresher take on eggplant parm
    2. Pioneer Woman’s Black Bean Burgers
    3. Gimme Some Oven’s Mushroom Stroganoff – I do alter the sauce recipe for more flavor
    4. Meghan Markle’s Zucchini Bolognese – my husband flips when I make this and he’s not big into veggies.
    5. Broccoli Salad – this is always the first thing to go at parties / BBQs. Can be a side but we eat bowls of it as meals.

    I made that lemon butter pasta about a month ago! So good! I’ve been trying to go more plant based also and I definitely get in a rut so this was fun seeing what other people are eyeing!

    We’ve made your lentil detox soup so many times since quarantine started! Its so good, and everyone loves it. I also just made a summer pasta with homemade pesto with basil from the garden, roasted cherry tomatoes from the garden, and sautéed zucchini from the garden all over chick pea pasta!! Also topped with goat cheese 🙂 it is so good!! hope you find something new and inspiring!
