My Favorite Summer Food

Happy Monday! Happy 4th of July week! Happy Summer! Happy everything… Can you tell we had an amazing weekend based on that opener? It was hot (very hot) and sunny and now it’s the first day of a short week with the weird mid-week holiday. So it’s Monday but also kind of Thursday which is awesome.

On Saturday, we caved and bought Amalia a kiddie pool (and this cute rainbow float) and then proceeded to spend hours in it splashing around with her. She’s turning into quite the water baby!

I also bought her this cute and patriotic swimsuit that’s currently on sale. I wanted to also get her this little romper but they didn’t have it in her size. It’s $8 online so I hope one of you guys snags it.

I also ate more than one lobster roll. I had posted the photo below to my Instagram stories a few days ago (at Rowayton Seafood) and people kept asking me if I actually ate it. Of course! TBH, my photographer and I ended up splitting it in the parking lot, but that wasn’t as pretty to photograph haha.

I grew up looking forward to lobster rolls every summer and nothing has changed. Summer is my favorite season for eating in general, but lobster rolls take the cake. Remember my 80/20 rule? It might be more like 70/30 in the summer because of that. #allofthewhitebread

Here are a few more of my favorite summer foods:
Corn on the cob (we grill it with salt, pepper and butter wrapped in tin foil)
Watermelon (with or without lime juice)
Pesto on everything
Grilled salmon (with pesto, naturally)
Tomato salads (in my family we do them with just olive oil, red wine vinegar, and oregano)
Summer salad (tomato, cucumber, corn, mozzarella, basil)
My summer pasta recipe
Ice cream
All of the stone fruits (especially peaches)
Grilled pizza
Rosé
Gin & tonics (I only drink them in the summer for some reason)

Anel and I actually have a running list on his phone lobster rolls we’ve eaten and their ratings. Our number one pick for 10 years running are the twin lobster rolls from Easton’s Beach in Newport. Maybe it’s because I grew up eating them or because we had them on all of our trips there when planning our wedding, but it’s more than just a sentimental thing. They’re insane and also the best priced out of any I’ve seen.

Anel has to work tomorrow but normally we would have headed out of town the day before the 4th, so I decided to take a whole day off for myself! I’m going to spend the morning packing for our trip and then a few hours at the beach with a good book… and possibly a lobster roll.

I’ll be back here on Monday (my birthday!) with lessons that I’ve learned over the past year. In the meantime, I hope you have an amazing week doing whatever it is you’re doing for the holiday.

    It sounds weird but there is a great food stand in Wilton that serves up the best warm lobster rolls (and sweet potato waffle fries) I’ve ever had! No indoor seating but they have a BYOB courtyard and yummy ice cream brought in from a small farm in Vermont. http://www.heibecksstand.com/

    You HAVE ago try the hot lobster rolls at Lobster Landing in Clinton, CT. Having grown up in Connecticut and having my fair share of lobster rolls, this is THE BEST I’ve ever had. And the owner is the sweetest man!
