Chocolate Matzo Brittle

Even though I'm not Jewish (well, 1/4 technically), I have always loved Matzo. I found this incredible recipe for Matzo brittle a couple days ago, and had to try it out. It's sweet, nutty, chocolaty, and unleavened. Happy Passover!

(This makes a lot so I would cut the recipe in half if you're making for only 1 or 2 people)

Ingredients:
-10 ounces semisweet chocolate chips
-12-ounce box whole wheat matzo
-8 ounces butter (original recipe used Passover margarine)
-3/4 teaspoon salt
-1 cup light brown sugar
-1 teaspoon cinnamon
-1 teaspoon vanilla extract
-1 cup chopped pecans

Directions:
-Preheat oven to 375 degrees.

Banana Peanut Butter “Ice Cream”

Last week, my coworker had been stress-eating Ben & Jerry's ice cream and came to me for a solution. I played around and came up with this recipe that tastes (almost) like ice cream and has no added sweeteners. It's actually so good that I've made it 3 times since for a sweet treat with no guilt!

Massaged Kale Salad


Original recipe from: Feeding the Whole Family

Ingredients:
-1 bunch kale
-1 tspn sea salt
-1/4 cup sunflower seeds
-1/4 cup red onion, chopped
-1/3 cup dried cranberries
-1/2 green apple, chopped
-1/4 cup olive oil
-2 tblspon apple cider vinegar/balsamic vinegar
-*optional goat or gorgonzola cheese

Directions:
-De-stem kale by pulling the leaf off of the the stem
-Wash and dry the kale leaves
-Stack leaves, rollup and cut into thin ribbons
-Put kale and salt in a large bowl
-Massage salt into kale with your hands for about 2 minutes or until it looks wet and broken down
-Put kale in a fresh bowl and discard any leftover liquid
-Stir in onion, cranberries, apple and sunflower seeds
-Dress with oil and vinegar and toss
-Add cheese if desired

Pretty in Pink Smoothie

Sometimes I'm just in the mood for something pretty. This week's smoothie recipe was inspired by my urge to create something pink. Not only did it serve it's purpose as a healthy and tasty breakfast option full of anti-oxidents, but it also put a little skip in my step!

It reminded me of the tulips that are slowly creeping up out of the ground and the watermelon that will soon grace every barbecue in town!

Spring Coats for Every Shape, Size, and Style!

Apparently, winter hasn't had enough of us yet. I'm currently looking out the window and snowflakes...on the 1st of April. These days, it goes back and forth between 70 degrees and 30 degrees, and it's hard to dress for everything in between! My friend, Megan, requested a post on good spring coats so here are a few of my favorites.
