A Green Smoothie for the Green Smoothie Haters

A few months ago, I did a juice cleanse with Blue Print Cleanse. Although I've always disliked pineapple, one of their juices changed my mind. It was a fresh pressed pineapple, apple, and mint juice. I decided to experiment with this combo in my Vitamix and added kale and coconut water to the mix. This green smoothie tastes more like sweet pineapple juice with a hint of mint more than anything!

Chocolate Chip Peanut Butter Blondies

We are having a bake sale today at work to raise money for Elisa and Nathan: An adorable couple from Brooklyn who were each recently diagnosed with stage 3 and 4 cancer within days of each other. For the bake sale, I knew that no one would buy anything too unhealthy but I didn't want to go crazy on the butter and sugar so I made blondies that have a little bit of healthy in them and a whole lot of rich, sweet, chocolatey heaven.

Strawberry Avocado Green Smoothie

This smoothie was inspired by a smoothie called "Peachy Green" from Natalie Duhamel's Smoothie of the Day e-book

I have been trying to experiment with other green smoothies and so far this one is the most unusual but surprisingly delicious! I substituted strawberries for peaches and added less avocado and banana than the original recipe called for.

Asparagus and Truffle Oil Risotto

It's officially the first day of spring! I can't tell you how excited I am to trade in my winter boots and puffy coats for sunglasses, flip flops, and my new hot pink J.Crew chino shorts (more on that later this week).

As soon as the snow started melting and the sun started shining, I began to crave asparagus, spinach, sprouts, and all of the amazing green foods that pop up in the next few months.

Sweet and Salty Cashew Cookies

I put out a large Tupperware container of these cookies at work and they were gone in under 15 minutes. They are potentially my favorite cookies of all time. Salty, sweet, crunchy, so satisfying. Enough said.

Derived from original recipe in King Arthur Flour's cookbook- Whole Grain Baking

Ingredients:
-1/2 cup unsalted butter
-3/4 cup organic cane sugar
-2 cups rolled oats, blended in Vitamix for a few seconds
-1 egg
-1 tspn real vanilla extract
-1/2 tspn sea salt salt
-1/4 tspn baking powder
-2 cups salted cashews, finely chopped (I blended those for a few seconds as well)
- extra fine sea salt for topping

Directions:
-Preheat oven to 350
-Mix butter, sugar, salt, baking powder, vanilla, and egg until smooth
-Add oats and mix
-Add cashews and mix
-Drop dough by teaspoons onto lightly buttered baking sheets
-Sprinkle each cookie with salt
-Bake 12-14 minutes, or until light golden brown
-Remove from the oven and cool for 5 minutes before moving.
