Gray Malin at Home

After living in our new apartment for 5 months now, I'm finally ready to let you all into my living room. I've spent a lot of time and effort making it beautiful, comfortable, and 100% us. I'm so proud about how it turned out!

Crunchy Avocado Toast

Avocado toast is a trend that doesn't seem to be going away anytime soon. I eat it probably too often so I like to make all kinds of varieties so that I don't get sick of it (like that's even possible?).

I've done the citrus thing with a squeeze of lemon juice, I love adding chia seeds or hard boiled eggs for extra protein, and sometimes I drizzle it in honey.

My Go-To Chili

I love chili and make it way too often in the winter months. This has been my go-to recipe for the last decade or so after tweaking and refining it for years. Chives and a touch of cocoa powder really make this one shine!

Ingredients:
- 1 lb ground beef (or turkey)
- 2 medium-sized yellow onions, chopped
- 3 cloves garlic, diced
- 1 14 oz can crushed tomatoes
- 1 28 oz can diced tomatoes
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 cup frozen corn
- 1/2 jalepeno, chopped
- 2 cans black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 2 Tbs cumin
- 1 Tbs chili powder
- 1/4 cup chives, chopped, plus more for garnish
- 1/4 tsn unsweetened cocoa powder
- Salt and pepper to taste

Toppings:
- Shredded cheddar cheese
- 1 avocado, salted and sliced
- Cilantro, chopped

Directions:
- Heat olive oil in a large skillet and sauté the onions for about 5 minutes
- Add the ground turkey, garlic, salt and pepper to taste, and cook until lightly browned
- Move turkey and onions into the slow cooker
- Add all of the other ingredients and give it a good stir
- Cook on high for 4 hours
- Serve in bowls and sprinkle with cheddar cheese, sliced avocados, and cilantro
- Enjoy!
