Simple Suppers: Vegetarian Taco Bowls

This recipe... if you can even call it that... is so easy and amenable to different tastes. For the kids, I often just do rice, beans, cheese, and sour cream, then add the bells and whistles for the grown ups. It is made up of pretty much just three ingredients: rice, beans, and corn. Then you can top it with whatever you like!

I have been so busy with my cookbook and another project I'm working on (launching Sunday!) that I completely spaced on 5 Random Things in March. So hello again with my favorite post of the month. Life Lately: Volume 84

Greetings from New Hampshire! We drove up with the kids yesterday for the holiday weekend and some family time with the tiny uncles.

This week, as you could probably tell, was a very rollarcoaster-y one for me. I was finally able to announce my cookbook which felt amazing but I also found out Luca needs his tonsils removed this summer.
