Greetings from New Hampshire! We drove up with the kids yesterday for the holiday weekend and some family time with the tiny uncles.
This week, as you could probably tell, was a very rollarcoaster-y one for me. I was finally able to announce my cookbook which felt amazing but I also found out Luca needs his tonsils removed this summer.
Welp, the cat's chicken's out of the bag! I announced last night on Instagram that I'm writing a cookbook! I've been dying to share this news with you all since it became a reality at the end of last year. It's something that I've wanted to do for for years and I still pinch myself daily to make sure it's actually happening.

Sheet pan salmon is a go-to weeknight meal in my house because it's easy, healthy, and Luca will crush it. Amalia is a picky eater so she won't go for this but I love seeing my little guy eat two servings of salmon for dinner.
The best part about this recipe is that you basically throw everything in the oven and go about your business.
