Every year when Mother’s Day rolls around, I find myself reflecting (even more than usual lol) on just how much moms really do every single day. From wiping noses (and butts), trying to give sage advice when we often have no idea what we're doing ourselves, or managing to keep everything running smoothly (even when we're running on empty).
Last week was a busy one in my house with two birthdays, Easter, and spring break all rolled into one! We stayed home for the break because Anel and I had too much going on with work and ended up having a great time at home.
I took Amalia into the city one day to see &Juliet on Broadway and she literally has not stopped talking about it since.
I've seen this viral salad all over the socials and decided to make it for myself and it is delicious, filling, bright, and the perfect make-ahead lunch. I add shredded chicken and avocado (not pictured) to mine for some more protein and healthy fat. I also added more flavor to the dressing as the original recipe is only lemon juice and olive oil.
IDK about you but I am so ready for this winter to be over and spring to get a move on. I made the most grave parenting mistake ever last year and spoke out loud *gasp* about how Amalia never gets sick anymore because she was a daycare baby. I know I know, so stupid. She just recovered from a brutal flu that took her down for 8 days.
