Healthy Go-To Classic


I'm in the middle of my Resolution Cleanse which is seriously limiting what I can eat and cook this week. I'm feeling energized and more alive then I have felt since before the holidays!

I started the cleanse off with a bang, making a batch of my all time favorite go-to recipe that I make at least once a week.

White Beans and Kale


Ingredients:
1/2 yellow onion, chopped
2 cloves garlic, minced
1 head kale, washed and cut into strips
1/2 can of Eden Organic cannelloni beans
Extra virgin olive oil

Directions:
Sautee onions in olive oil for 3 minutes or until tender
Add garlic and cook for 1 more minute
Slowly stir in kale and continue to stir as it cooks
After 1 minute, add the beans and cook for 2 more minutes

Season with salt and red pepper flakes

Sometimes, I mix this with whole wheat or brown rice pasta.

Puttin’ on the Glitz


The last few weeks have been a whirlwind of holiday parties, Christmas tree lightings, and family events. My goal was to wear at least one thing sparkly to all of them. Now that the holidays are over and the New Year has rung in, I am vowing to keep my dedication to sparkles and over the top glitz strong!

Chocolate Chip Meringue Cookies

My Aunt Patti is an incredible baker, bringing melt-in-your mouth cookies, pies, and cakes to every family event. Anel fell deeply in love with her chocolate chip meringue cookies at a tree-trimming weekend in New Hampshire a few weeks ago so I pressed her for the recipe to surprise him last night. Little did I know that an electric mixer would have saved me 40 minutes of beating egg whites with a whisk and my bare hands, leaving me with a sore arm.

Cleaning out your kitchen is the perfect activity for cold winter weekend afternoons when going outside seems like the worst idea in the world and you've already watched 15 episodes of your favorite reality show on Hulu. I love to keep mine neat and organized which I think I got from my mother who literally has every drawer and shelf in her house labeled.
