Blueberry Superfood Smoothie

It's Wednesday. Your work-week is halfway over. It's time to inject some extra energy into your system, sans caffeine of course. This morning I drank this delicious smoothie and feel like I could conquer the world today! You can substitute the liquid with any kind of nut, coconut, or soy milk.

Ingredients:
- 1 cup almond milk
- 1/2 cup frozen blueberries
-1/2 banana (I usually peel and freeze mine for better texture)
- 1/2 cup frozen spinach
- 1 tblspn almond butter
- 1 tblspn raw cacao powder
- 1 tblspn maca root powder
- 1 tblspn ground flax seeds

Directions:
Blend!

Tomato Chick Pea Soup

I originally found this recipe on the Vitamix website. If you have a Vitamix, I recommend going there for ideas. There are hundreds of recipes! I have included my version of the soup below and a version if you don't own a Vitamix as well.

Ingredients:
4 cups vegetable broth
1 14 oz. can chopped tomatoes, with juice (1/2 reserved)
2 15 oz.

Power Bars

This recipe comes from Heidi Swanson's book, Super Natural Cooking.

Ingredients
1 tblspn coconut oil
1 1/4 cup rolled oats
1 1/4 cup chopped walnuts
1/2 cup oat bran
1 1/2 cup brown rice cereal
1 cup dried cranberries
3 tblspn finely chopped crystallized ginger
1 cup brown rice syrup
1/4 cup natural cane sugar
1 tspn pure vanilla extract
1/2 tspn fine-grain sea salt

Directions
Grease baking pan with the coconut oil.

Figs & Peanut Butter


Ingredients:
Unsweetened dried figs
Organic unsweetened peanut butter

Directions:
Cut figs in half
Spread peanut butter in the middle
