Baked Cranberry Chicken Thighs

I love how beautiful this dish looks plated and served family style. It's great for any night of the week and it looks extra pretty on a holiday table!

Cranberry Chicken Thighs

Makes 4-6 servings

Ingredients:

  • 1 cup fresh cranberries
  • 1/4 cup brown sugar
  • 1 Tbs water
  • 6 chicken thighs
  • 6 garlic cloves, minced or pressed
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1/3 cup olive oil
  • 1 medium yellow onion, chopped
  • Juice from 1/2 lemon
  • 1/2 cup chicken broth 
  • Rosemary sprigs for garnish, optional

Directions:

  1. In a small bowl, mix the cranberries, brown sugar, and water.

October New Arrivals in the Lemon Stripes Market

Versed is a new-to-the-shop beauty brand with some amazing products at a great price point. My favorite thing I've tried from them (so far) is Smooth Landing, an advanced retinoid eye balm. It's a fraction of the price of similar products but works really well.

Couscous & Kale Bowl

This hearty, flavorful, and nutrient-packed grain bowl is so yummy and warming and makes for great leftovers too! You can change up the amounts of anything in the bowl, but I approximated how much I like to put in. For more protein, add chicken sausage!

Couscous & Kale Bowl:

Makes 2 to 3 servings

Bowl Ingredients:

- 2 cups cooked pearl couscous
- 1/3 cup dried cranberries
- 1/4 cup walnuts 
- 1/2 red onion, thinly sliced
- 2 cups chopped kale leaves 
- 1 cup roasted butternut squash, cubed
- 1 cup chopped Italian chicken sausage, cooked (optional)

Dressing Ingredients:
- 1/4 cup olive oil
- 2 tbs apple cider vinegar
- 1 tbs dijon mustard
- 1 tbs honey
- 1 garlic clove, pressed or minced
- Juice from 1/2 lemon
- Salt and black pepper to taste

Directions

  1. Roast the butternut squash (directions here) or you can do this ahead of time.
