Cranberry Chicken Thighs
Makes 4-6 servings
Ingredients:
- 1 cup fresh cranberries
- 1/4 cup brown sugar
- 1 Tbs water
- 6 chicken thighs
- 6 garlic cloves, minced or pressed
- 1 tsp dried rosemary
- Salt and pepper to taste
- 1/3 cup olive oil
- 1 medium yellow onion, chopped
- Juice from 1/2 lemon
- 1/2 cup chicken broth
- Rosemary sprigs for garnish, optional
Directions:
- In a small bowl, mix the cranberries, brown sugar, and water.
